from garden to plate: stuffed peppers

A few days ago – before this beautiful warm weather – we had a frost warning. So Julian and I went out to the garden with flashlights and did some harvesting! We came back in the house with a big bowl full of peppers. After enjoying them in salads I decided to make something new – stuffed peppers. Having never made this dish before I just made it up as I went along. The ingredients included: wild rice, quinoa, ground beef, onions, corn, jalapeno peppers and cheddar cheese. Yum. They were delicious.
